The Kitchen Manager organizes and directs the activities of the
kitchen staff and is responsible for training, supervising, and
working with all cooks and kitchen stewards to prepare, cook, and
present food in accordance to hotel standard recipes in order to
create consistent quality food products. The Kitchen Manager will
report directly to the Food & Beverage Manager/Director to maintain
and exceed the expected high quality of service in the restaurant,
in-room services, catering and other F&B Department planning to
meet operational needs. A key role within this position is also to
fill the role of a chef in preparing meals for our guests and
executing catering functions. The Kitchen Manager is required to
adhere to the mission and values of Widewaters Hotels, LLC. What
you will be doingThe Kitchen Manager is focused and responsible for
the following:Kitchen Management and Organization
- Oversee hotel's F&B market and merchandising displays in
the absence of a Food & Beverage Director or Manager. Ensure
products are on trend in the hotel's region and follow all
applicable brand and WWH standards. Daily, weekly, and monthly
inventory will be conducted according to WWH standards to maintain
revenue and cost goals.
- Maintains prompt and efficient service of all meals, snacks,
functions and beverages to the required standards.
- Establishes and implements SOPs and follows brand standards to
ensure consistent execution.
- Ensures kitchen, walk-in coolers, and all storage areas are
appropriately cleaned, sanitized, and organized.
- Oversees set up stations according to restaurant and branding
guidelines.
- Ensures cleaning, sanitizing, and prep procedures for dishes,
floors, and surfaces at the end of all shifts are followed.
- Inspects and selects uses of fruits, vegetables, meats, fish
and other food products.
- Understands and follows recipes while employing math skill and
trains employees on the same.
- Ensure proper use and maintenance of all equipment and stations
and report any equipment in need of repair to chef and engineering
department.
- Promotes restaurant to increase revenue.
- Must have a positive attitude at all times.
- Responsible for maintaining quality of food product and
ensuring consistency in food delivery while following brand
standards if applicable.Administrative Functions
- Responsible for all food ordering ,and inventory, while
maintaining a favorable food cost by utilizing cost management to
increase profitability and minimizing waste
- Up to date on industry trends and subsequently suggests
appropriate improvements or changes within Kitchen.
- Works with management team to develop/meet yearly labor, food,
and beverage budget, margins, and cost controls.
- Must adhere to all brand requirement standards if applicable
and standards set forth by the Widewaters Hotel Operational Audit
to achieve an "Excellent" score.
- Creates daily specials and works closely with sales team
ensuring goals are geared towards exceeding guest
expectations.Kitchen Specific Cook Duties
- Performs the duties of a Chef.
- Ensures preparation of all food items as directed in a sanitary
and timely manner.
- Suggests and follows recipes, portion controls, and
presentation specifications
- Organizes, ensuring kitchen is clean, and maintains station
while practicing exceptional safety, sanitation and organizational
skills.Human Resources/Management Responsibilities
- Operates kitchen in a manner that will enhance all employees'
work experience, providing coaching, counseling and mentoring to
develop kitchen staff to be their best while maintaining discipline
standards when appropriate.
- Must be able to foster a successful team environment with
appreciation and respect for diverse populations.
- Responsible for interviewing, training, supervising of all
kitchen staff including line cooks and kitchen stewards.
- Responsible for all kitchen scheduling including assigning in
detail specific duties to kitchen staff so that proper coverage is
maintained while keeping payroll costs in line including approving
vacation requests, and approving any overtime.
- Performs annual performance reviews for kitchen
staff.Administrative Functions:
- Responsible for all food ordering and inventory, while
maintaining a favorable food cost by utilizing cost management to
increase profitability and minimizing waste
- Up to date on industry trends and subsequently suggests
appropriate improvements or changes within Kitchen.

expectations.Other Duties Assigned:
- Must adhere to all company policies and procedures as well as
the Widewaters Hotels LLC Employee Handbook.
- Must be able to participate in the hotel's MOD program.
- Assists others as needed on special projects, as
necessary.
- Comply with all department, hotel, and company policies and
procedures.
- Perform any assigned task not outlined above that the associate
has the ability to perform.

- Support COMPANY PILLARS by following and executing: Revenue
Improvement, Cost Management/Profitability, Exceeding Guests
Expectations, Associate Engagement, and Outstanding Physical
Product.
- Must adhere to all company policies and procedures as well as
the Widewaters Hotels LLC Employee Handbook. Requirements
- Minimum of two years of culinary schooling preferred.
- Must possess a thorough knowledge of food & quality
- Should have at least three years experience of kitchen
experience, preferably as a kitchen supervisor or Sous chef with
knowledge of most international and domestic dishes.
- ServSafe certification required
- CPR certification and/or First Aid training preferred
- Ability to (within 30 days) receive proper local Food Safety
Training if deemed by county which property is located
